Truly fresh mozzarella is a semi-soft cheese with a high moisture content and it is traditionally served the day that it is made. However, it can be kept in brine up a week or longer, or even longer when it is held in a vacuum-sealed package.

The combination of fresh tomatoes, fresh basil and fresh mozzarella is incredibly delicious. And so, like many others who seek to focus on eating seasonally foods, we are looking forward to summer when the tomatoes are ripe. Then, we will resume regular production of Blue Jacket Mozzarella; it's worth the wait.
