Hull's Trace Cheese Name with Meaning

One of the unique parts of being an artisan cheesemaker is weaving local history into the names of our cheeses. Our cheddar-style cheese, Hull's Trace, was named in recognition of the historic trail that runs through Logan County, not far from our creamery.
A historical marker placed by the Logan County Historical Society sits in the center of West Liberty, Ohio along U.S. 68. We often drive past this marker, and it sparked the idea for this cheese name.

At the beginning of the War of 1812, the United States was concerned about supplying Fort Detroit and the Michigan Territory. With British forces controlling Lake Erie, supplies could only be moved overland. In June and July 1812, troops under General William Hull constructed a trail that became known as Hull’s Trace—a 200-mile military road stretching from Urbana, Ohio to Detroit, Michigan.

This road not only supported the war effort but also advanced settlement in northwest Ohio. The path gave settlers a route to follow northward and made it easier to move belongings and access more established farmland. When soldiers returned from the war, many claimed the best parcels of land they had seen along Hull’s Trace.
How It Is Made
We start with fresh cheese curds, pressing them into 25-pound wheel moulds. After resting overnight, the curds knit together into a solid wheel. From there, the cheese moves to our aging facility, where carefully controlled temperature and humidity allow it to develop character. After about two months, Hull’s Trace is ready—aged just long enough to bring out its rich, cheddar-style flavor.

Sometimes we add chives and garlic to the mould. Other times we mix in chipotle peppers. It’s still Hull’s Trace, but with an extra twist of flavor—perfect for building a cheese board with options to please everyone.
For those who enjoy a deeper bite, we age select wheels longer. That’s when Hull’s Trace becomes Greenville, a bold, complex cheese that dazzles your tastebuds.
